两年前亲戚送了一大包中国小干贝,味道鲜甜却带有许些腥味,老公不是很喜欢,所以我多数把它用来做成干贝萝卜糕,来慢慢清货。
前年到台湾高雄旅游时,曾经在旗津买过类似的干贝酱,一直念念不忘它的美味。如今自己在家也能做了,拿来拌饭吃,真是一级棒哦 ^-^
原食谱取自:Carol
(我用银鱼代替虾米)
材料:
- 干贝 150g
- 银鱼 50g
- 扁鱼 30g
- 蒜头 60g
- 红葱头 60g
- 朝天椒 40g
- 纯橄榄油 350g
调味料:
- 酱油 50cc
- 蚝油 50cc
- 米酒 30cc
- 白糖 2Tbsp
- 将干贝洗净,泡沸水软化,防置到凉。
- 泡软干贝沥干水分,撕成细条。
- 银鱼洗净,沥干水分。
- 扁鱼干,蒜头,红葱头和辣椒分别用食物调理机打碎。
- 炒锅中倒入橄榄油,油热就放入干贝丝小火炒3-4分钟至略为金黄色。
- 将银鱼,扁鱼干放入,拌炒2-3分钟。
- 再继续将蒜头,红葱头,朝天椒加入炒香。
- 最后再将全部调味料加入,小火炒2-3分钟。
- 装入用热水消毒干燥的玻璃瓶,冷却后放入冰箱冷藏保存。
- 油的分量,一定要能盖过干贝
Ingredients:
- Dried scallops 150g
- Dried baby silver fish 50g
- Dried sole fish 30g
- Garlic 60g
- Red shallots 60g
- Chili padi 40g
- Olive oil 350g
Seasoning:
- Light soy sauce 50cc
- Oyster sauce 50cc
- Rice wine 30cc
- Sugar 2Tbsp
- Soak dried scallop into hot water. Set aside until the water turn cool.
- Drain scallop. Tear them into fine shreds.
- Wash and drain dried baby silver fish.
- Dried sole fish, garlic, red onion and chili padi chop them finely (or using food processor) respectively.
- Heat the oil in a wok. Add scallops, low heat fry for 3-4 minutes or until golden brown.
- Add in baby silver fish and sole fish, stir continuously for 2-3 minutes.
- Add in garlic, red shallot and chili padi, fry until fragrant (reduce the heat if necessary).
- Add in all the seasoning and stir for 2-3 minutes, with low heat.
- Transfer the XO sauce to a sterile jar. Pour in enough oil to cover and refrigerate XO sauce.

ReplyDelete我有时打开冰箱还拿干贝当零食,偷吃一两个。干贝好贵啊!小小一罐酱料可不便宜。这个拌粥吃一定很好。
