紫薯喜粄


 
之前就看见面子书一位糕点高手Soh Pin Tee分享这个圆嘟嘟美丽的南瓜喜粄,当时也只是想想看看,没有动手做,因为家里人少,深知如果做了,也是自己一人独吞!



 
昨天是小外甥的弥月之喜,早就买了好漂亮的紫薯回老家,准备做些糕点来款待人客,部落格里的各式各样喜粄又到处满天飞,叫人看了眼花缭乱,也心痒痒的。
 
 

 
把喜粄带回家时,从老妈口中才知道,原来这是客家河婆人在喜庆节日爱做的糕点。难怪从没看过客家藉的老妈和婆婆做过这种喜粄。
 
 

 
家人都非常喜欢这个喜粄,都赞它好好吃。阿姨吃后,直道找回了以前喜粄的味道,呵呵呵!
 
 

 
这个喜粄配方,整形时容易上手又不粘手,蒸出来又圆嘟嘟的可爱得很呢,更棒的是,即使是冷了后,口感还是非常柔软好吃呢 ^-^

食谱改自:小雨伞的天空

材料
  • 普通面粉 250g (过筛)
  • 糯米粉 250g(过筛)
  • 细砂糖 150g
  • 即溶酵母 6g
  • 紫薯泥 150g
  • 清水 310g
  • 植物油 30g
  • 香蕉叶 适量
  1. 酵母溶于清水内,拌均。干净的香蕉叶用热水烫软,剪成适合大小的块状。
  2. 面粉,糯米粉,细砂糖,紫薯泥和酵母水,混合均匀搓成团(水分慢慢加入)。
  3. 分次加入油,再搓揉均匀(如果会粘手的话,用朔料刮刀代替)
  4. 手掌抹上油,把面团直接分成50g的小团,搓圆。
  5. 把圆团放在香蕉叶上,用掌心轻压按扁,发酵25-30分钟。
  6. 发酵好的喜粄,用手轻轻按一按,表面有弹性,就可以煮开蒸锅里的水,水滚后放入喜粄,中火蒸12分钟,马上熄火(不要马上取出锅里的喜粄)
  7. 锅盖打开小缝保持5分钟,才小心打开锅盖,取出喜粄待冷,别让水分滴到喜粄,喜粄就会美美了。

      喜粄有加入糯米粉,馒头则没有,所以喜粄的口感带Q,馒头则蓬松。

  15. 喜粄啊。。喜粄真是魅力无法档,虽然简单,但是不失美味,所以得到很多朋友的青睐。。但是我确实没有吃过。。我家老公guarantee不会吃,我唯有叫姐姐做给我吃,如果喜欢才自己动手做呵呵。。
