好吃到吮虾壳 ~ 干烧明虾 Dry Braised Prawns



好久没有上重口味的虾了,今天就请大家吃这道好吃到连沾在虾壳外边的汁,都会舔干净的干烧明虾吧!记得要煮多点饭哦,呵呵。。。。

哎呀,请各位不要拿臭鸡蛋扔我啦,我不是在老黄卖瓜,是真的好吃嘛 ^.^
 
 

材料
大虾 12只
蒜茸 2 tbsp
葱白 1 tbsp(切碎)
指天椒 2-3条(切碎)(怕辣者,可用普通红辣椒代替)

调味料
豆酱 1.5 tbsp
Maggi 番茄酱 1/2 tbsp
白砂糖 1 tsp
浙醋 1/2 tbsp
红糟 1 tsp(可用1 tbsp绍兴酒代替)
水 4 tbsp

  1. 大虾剪去长须,保留虾壳,背部开一刀,剔除砂肠,洗净,拍干水份。
  2. 锅里加入油烧热,把虾放入煎至两面微焦,捞起,放在吸油纸上,吸干油。
  3. 热油锅,加入蒜茸和葱白碎爆香,再加入辣椒碎和豆酱炒香,然后把其他调味料加入煮滚,再把虾加入煮至汁收干为止,即可。
  • 不同牌子的豆酱,咸度会有所不同,请自行调整分量。
  • 豆酱一定要用油炒过,才会释放出香味。
  • 这道菜的味道,有着咸甜酸辣,很惹味的,也很好下饭。
  • 以上调味料的分量只供参考,不同牌子的调味料,酸咸度会不同。煮酱汁时,可以调整到自己喜欢的味道,才把虾放入。

    先把虾外面的酱汁吃干净,再拔下壳(如果虾壳是软的就吃下去哦)
    拔好虾壳留尾巴, 再沾满满酱汁放进口里..好满足^-^

  8. Yoh, 10.40pm already & saw this plate of prawns, feel so hungry now, what to do huh? Hahaha! I haven't had this dish for such a long time! Looks very delicious!
