Indian Style Curry Fish


当我在 Lena(frozen wings)的部落各看见她上了这道印度咖哩鱼时,我就很兴奋的 yes yes yes ,不管我的food list有多长,我全跳过,先煮它!煮好后,尝了一口,又再yes yes yes 的,因为太好吃了!当然,我的体重也是yes yes yes 的咯,哈哈哈!

这个印度咖哩鱼,我极力推荐给那些喜欢印度菜的朋友们,好吃又开胃,重要的是,它不难煮。煮出来的味道,并不输给外头的餐馆噢!

这个咖哩的分量很多,如果你想用它来煮大鱼头,是绝对足够的,还有,一定要记得放羊角豆,它可是这道菜的灵魂之一呢!



那么巧,家里也有Chef Devagi Sanmugam 的食谱,就做了Potato Rice来伴着一块吃 ^_^


Indian Style Fish Curry

原食谱:Homestyle Indian Cooking by Devagi Sanmugam
食谱参考:frozen wings / The Sudden Cook

材料:(分量有稍微调整)

马交鱼(tenggiri fish)500g(切片)
芥末子(mustard seeds)  1/2 tsp
胡芦巴(fenugreek ) 1/2tsp
芫茜粉(coriander powder) 2tbsp
黄姜粉(turmeric powder) 1tsp
孜然粉(cumin powder) 1tsp
酸子汁/asam(tamarind paste)80g(加入375ml的清水,过滤取汁)
辣椒粉 1 1/2 tbsp(我放2tbsp)
小洋葱 100g(去皮,切片)
姜 (拇指般大,切片)
咖哩叶 2-3串
椰浆 65ml
羊角豆 200g
番茄 2粒(切块)
青辣椒 2条
盐 适量
食油 2tbsp

  1. 热锅中加入2tbsp的油,炒香mustard seeds 和 fenugreek,再加入小洋葱片,姜片和咖哩叶,炒至洋葱成微褐色(约3-4分钟)。
  2. 加入coriander powder,turmeric powder,cumin powder,chili powder,酸子汁(建议酸子汁先加1/3进去),搅拌均匀,让酱汁滚约5分钟。
  3. 加入羊角豆,青辣椒和番茄,煮约3分钟。
  4. 加入鱼片和椰浆,煮约5分钟或至鱼片熟了,加盐调味,如不够酸,可再加入酸子汁,如汤汁太浓稠,可加入适量清水。

  9. Cass, you are so pandai, looks like there is no dish can challenge you! Yes, I do remember I saw this dish from Lena's place b4. Both of you have done a great job! I tell you, I can just eat a bowl of rice with the curry sauce only, the fish leaves it to you & your hubby, hahaha!

      少了这些香料,就没有印度curry的味道了!
      它们不难找,你去马来商店就可以看到了,包好一小包小包的:)
