突然很怀念,小时候老妈常常炖的冬瓜盅。
纵然老妈的工作很忙碌,厨艺高超的她,常常用很多心思为我们准备三餐。
用自家种的冬瓜,自家养的鸡,有时老妈也会用排骨,加点药材进去一起炖,
对当时年幼的我们来说,这就是人间美味了!
不知道为什么,长大后,家里的餐桌上,就不曾出现这道汤了。
哎呀,难道我们的老妈患上老年痴呆症,把它给忘了??哈哈哈。。。。
材料:
鸡,冬瓜一粒(大粒),冬菇,干贝,姜片,枸杞子,青葱,盐
- 鸡去皮(可用鸡腿),切块,川烫去血水。冬瓜中间挖空(小心不要把底部挖破),去掉种子。
- 冬瓜底部用一个碗盛着(一定要稳),把鸡块,冬菇,干贝和姜片放入冬瓜里面,注入清水,冬瓜顶部用一块锡箔纸盖着,放入蒸笼里,中小火蒸2个小时。
- 把枸杞子蒸5分钟,待冬瓜盅好的时候,才加入汤里头,这样做,可以吃到枸杞子的甜味。撒上青葱,少许盐调味(我没放),趁热喝汤吃瓜肉。
- 可以用药材做汤底,药材要先另外用锅煮至出味,去掉渣,才加入冬瓜里。
- 尽量用大粒的冬瓜,我用2kg+的,大约3个人的分量。
吃饱饭整理照片时,才发现,我居然忘了放枸杞子,哎呀,是我有老年痴呆症啊!

My mum make this and it is my favorite soup. She used diced chicken and dried scallops. This looks good with chicken wings and mushrooms.

it's a wonder that you're still cooking a lot of dish from your mum..these recipes are really a treasure..i just make sure when i cook this, i must be careful placing the winter melon in the pot!
