在家也能煮出餐馆菜~ 蒸蒜茸竹蚌 Steamed Razor Clams


这道蒸蒜茸竹蚌,是海鲜餐馆常见的一道菜,我非常喜欢它的口感,咬下去,脆脆甜甜的,非常好吃!但是,我很少会在海鲜餐馆吃这道菜!因为我发现,餐馆员工,常常会不小心把它蒸的过火,吃起来,如同嚼橡皮带般,难以咽下!

 
前几天,临睡前,老公忽然对我说很久没有吃海鲜了,嘴很馋,我吓了一跳,大老爷,那天不才煮了叁巴虾吗?虾子不是海鲜吗?后来想想,就猜他是想吃清蒸的海鲜!过了两天,他果真就带了一包活竹蚌回来 。。。。

这道海鲜,煮法和蒜茸粉丝蒸虾大同小异,要做的好吃,没有秘诀,只要竹蚌新鲜,蒸的时间要拿捏得准,一蒸好后,马上就要起锅,趁热吃,就非常美味了!好了,不多讲了,请大家吃海鲜吧!
 
材料
竹蚌 6支(约8寸长)
蒜头 12-15瓣(切碎)
冬粉 40g
青葱 少许(切粒)
红辣椒 少许(切粒)(可不加)
食油 2tbsp
盐 1/2tsp

  1. 把蒜头碎用热油爆香,炒至微褐色(小心,不可炒焦,不然整道菜会有苦味),加入1/2tsp的盐炒均匀,捞起来,冷却待用。
  2. 冬粉用热开水烫软,拿起来,放在自来水下冲水,沥干水待用。
  3. 竹蚌对半打开(请用铁汤匙由上往下划开,小心不要被它的壳割破手),去掉内脏,洗干净。
  4. 把冬粉铺在打开的竹蚌,再把炒过的蒜茸铺在冬粉上面,撒上红辣椒,放在蒸笼上(水一定要滚),大火蒸4分钟,蒸好后,马上拿出来,撒上青葱粒,趁热吃。
  • 个人不建议放新鲜的蒜茸去蒸,新鲜的蒜茸味道太强
  • 尽量把竹蚌平铺在蒸笼里, 不要叠在一起, 如分量太多, 分开两次蒸



  


没想到,才吃完竹蚌,老公又对我念,他想吃咖哩鱼头!

      这里有活海鲜供应商,有些超市,也偶尔有卖,也不是经常可以看到。

  9. i like the title of your post, i wish i can cook like you!! i think i saw these clams in jusco..but they are frozen ones..if i see the fresh ones at the market, i would like to give them a try too cos the recipe is simple for me to follow..hehe

      Yes this is a very simple recipe and i like to prepare the seafood in this way :) Glade to know you like my recipes, hehe!
      I think live ones will be better coz after cook the texture and taste is slightly different compare to frozen ones.
